Working under the guidance of the Assistant Manager, this role is hands-on in leading the breakfast team, maintaining service standards, and delivering a warm, efficient, and personalised dining experience that reflects the property's commitment to refined hospitality Key Responsibilities Guest Experience Support the delivery of attentive, personalised breakfast service in accordance with luxury hospitality standards. Welcome guests warmly and ensure a positive and memorable dining experience. Address guest requests, dietary requirements, and concerns promptly, escalating issues to management where appropriate. Monitor the breakfast service area to ensure guest satisfaction and service consistency throughout operations. Operational Excellence Oversee daily breakfast set-up, including buffet presentation, table allocations, and service readiness. Coordinate with the kitchen team to ensure timely replenishment of breakfast offerings and smooth service flow. Ensure breakfast dining and service areas maintain the highest standards of cleanliness, ambience, and presentation. Support adherence to daily opening, operational, and closing procedures. Monitor breakfast service timelines to ensure efficiency and guest satisfaction during peak periods. Team Supervision & Support Supervise and motivate breakfast service staff, ensuring professional standards are maintained at all times. Conduct daily pre-service briefings, communicating occupancy levels, VIP guests, menu updates, and service priorities. Support the Restaurant Manager with staff scheduling, onboarding, training, and performance feedback. Lead by example, fostering a positive and collaborative team culture. Inventory & Financial Awareness Assist in monitoring stock levels of breakfast products, service items, linens, and consumables. Report shortages, breakages, or wastage to management to support cost-control measures. Support accurate billing procedures and POS system operation where applicable. Contribute to maintaining agreed departmental cost controls and operational efficiencies. Product Knowledge Maintain a thorough understanding of breakfast menus, ingredients, allergen information, and beverage offerings. Promote speciality breakfast items and beverage options to enhance the guest experience. Support ongoing team training to ensure confidence and consistency in menu knowledge and service delivery. Compliance & Safety Ensure adherence to food safety, hygiene, allergen awareness, and health & safety standards. Maintain accurate records and documentation relating to daily operational and compliance requirements. Ensure all breakfast service activities comply with company policies and legislative requirements. Required Experience & Skills 1-2 years' experience in a supervisory or senior service role within a luxury, or fine dining environment. Strong interpersonal and communication skills with a guest-first mindset. Demonstrated ability to lead by example in a fast-paced, team-oriented environment. Familiarity with POS systems, reservations management, and basic reporting. Sound knowledge of food and beverage operations; wine knowledge an advantage.
